Kodo Millet Pulao

Kodo Millet Pulao Recipe
Ingredients
- Kodo millet washed and soaked – 1 cup,
- Chopped vegetables – carrot, French beans, green peas, capsicum – 1 cup,
- onion – 1,
- ginger garlic paste – 1 tsp,
- green chili – 2,
- mint leaves – 12,
- salt – as needed;
- water – 1 & 1/2 cups,
To temper:
- Ghee/ oil – 2 tsp,
- 1 teaspoon cumin (jeera) seeds
- cinnamon – 1-inch piece,
- fennel seeds – 1 tsp and
- bay leaf – 1
To garnish
- coriander leaves
Preparation Method:
• Heat oil/ghee in a small pressure cooker. Add cinnamon, cumin seeds, fennel seeds, and bay leaf.
• Stir and add onion and ginger garlic paste. Sauté till the onion turns soft and light brown.
• Add the chopped vegetables and salt and stir for 2-3 minutes. Add mint leaves.
• Now add washed and drained Kodo millet.
• Add water, bring to a boil, mix well and cook for a whistle on medium to low flame.
• Garnish with coriander leaves and serve hot with curd or raita.
