The ingredients used are basic and are easily available in your kitchen. You can also experiment with the ingredients as per your taste and liking.

  • Preparation time: 10 mins
  • Soaking time: 20 mins
  • Cooking time: 10 mins

Ingredients:

  • Bajra flour
  • Jowar flour
  • Ragi or Nachni flour
  • Rice flour
  • Rolled oats or oats flour
  • chopped or grated carrots
  • finely chopped capsicum
  • Grated cabbage
  • Boiled french beans
  • Finely chopped tomatoes
  • Finely chopped onions (optional)
  • boiled green peas (optional)
  • Buttermilk or curds

Spices

  • Green chilli – ginger paste
  • Sesame seeds or til seeds
  • Cumin seeds or Jeera
  • Turmeric powder
  • Red chilli powder
  • Coriander-cumin seeds powder or Dhania-jeera powder
  • Salt as per taste

Method:

Mix all the flours and vegetables along with buttermilk in a large bowl. Add all the spices and mix well. Make sure to mix all ingredients well. If required, you can add more water or buttermilk to get a pouring consistency. Once the ingredients are mixed well, keep the batter aside for 20 mins.

Now, take an appam pan and grease it with either oil or ghee. Pour the batter with the help of a spoon into each of the appam moulds. Cover with a lid and let it cook on a medium flame for 5 mins. Flip each appam to the other side with help of a wooden spatula or a wooden knife or the back of a spoon. Let the appam cook for another 5 mins on the other side too.

Your soft, delicious appams are ready to serve. You can serve this with sambhar or coconut chutney.

M.o.M. Tip

I haven’t used any soda for making the appam and yet the appams turned out nice and soft.
